<p>COCONUT CREAM BREAD</p>
<p>1 tablespoon coconut flour<br />
1/2 teaspoon baking powder<br />
1 teaspoon unflavored protein powder<br />
1 tablespoons heavy cream<br />
2 Tablespoons melted butter<br />
1 egg, lightly beaten</p>
<p>In a bowl mix together the coconut flour, baking powder and the protein powder. Add the egg, melted butter and heavy cream. Mix the dry ingredients with the wet ingredients until the mixture looks creamy. Microwave for about 1 minute 30 seconds or until done. This makes a spongy soft bread.</p>

<p>I love quiche! It&#8217;s one of those few meals that I can eat for breakfast, lunch or dinner. This recipe is Induction friendly and delish! Enjoy~</p>
<p>6 slices of bacon<br />
1/2 medium onion, chopped<br />
8 oz fresh broccoli florets or (10oz box of chopped broccoli)<br />
6 large eggs<br />
3/4 cups of heavy cream<br />
8 oz of swish cheeses, shredded<br />
1/2 teaspoon of salt<br />
1/8 teaspoon pepper</p>
<p>In a skillet cook the bacon until crisp (about 10 minutes on a low heat). Drain on a paper towel and chopped. Add the onions to the pan and cook for 4-6 minutes until soft. Blanch the broccoli by adding to boiling water for 2 minutes then drain in a cold water bath. In a medium bowl whisk the eggs, cream, onions, broccoli, cheese, salt and pepper. Stir in the bacon. Pour into a greased pie dish and bake at 350 for 45 minutes. Cool for 5 minutes before serving.</p>
<p>Serves 6</p>

I held the crust in my hand while eating, which in itself was a treat when it comes to low carb pizza. Can you believe it&#8217;s induction friendly pizza? Here is the recipe with visuals of each step.</p>

<p>Deep Dish Low Carb Pizza</p>
<p>For Crust<br />
8 oz of Grated Mozzarella Cheese<br />
4 eggs<br />
1 teaspoon Italian seasoning</p>
<p>Spray frying pan with oil based spray. In a medium bowl, whisk the eggs then add the mozzarella cheese and mix together. Add the egg cheese mixture to the heated frying pan. Allow to cook over medium heat until the top of the mixture is slightly firm. Place the pan with the mixture directly into the oven and bake for 5- 8 minutes. Remove from oven.</p>

<p>For the topping<br />
2 oz sausage meat<br />
10 pieces pepperoni<br />
2 tablespoon chopped onions<br />
2 tablespoons chopped red peppers<br />
1/2 cup marinara sauce<br />
1/2 cup of Mexican four cheese blend</p>
<p>&nbsp;</p>
<p>In a fry pan, add the sausage meat and allow to brown. After 8 minutes add the onions and cook 2 minutes more. Add the green peppers and cook for 2 minutes. Pour the marinara sauce over the pizza and spread to cover the entire surface. Top with pepperoni then the sausage mixture. Top with the cheese. Bake at 375 for 10 minutes or until the cheese is melted.</p>

		</p><p>So, as you all know I was down the Jersey shore about a month ago. I had a fantastic time. My sister who came along, would always have cheese danishes for breakfast. I will admit to only having a bite.  They were out of this world. I knew immediately that I had to create a low carb version of these danishes. So today, I present to you my recipe for low carb cheese danishes! Enjoy: )</p>
<p>Cream Cheese Filling:<br />
4 oz of cream cheese<br />
1/4 cups of truvia * or <a href="http://www.netrition.com/cgi/goto.cgi?aid=3167&amp;pid=239-0001">Diabetisweet sugar substitute</a><br />
1 egg yolk<br />
1 teaspoon lemon juice<br />
1/2 teaspoon vanilla extract</p>
<p>Grind the truvia using a magic bullet or other similar device. In a medium bowl using a hand mixture, whisk together the cream cheese, truvia, egg yolk, lemon juice and vanilla extract. Set aside.</p>
<p>Making the pastry:</p>
<p>4 large eggs ( whites and yokes separated)<br />
1/4 tsp cream of tartar<br />
3 oz of softened cream cheese<br />
1 tablespoon coconut flour ( I use Bob Redmill Brand)<br />
2 tablespoons truvia (ground in the magic bullet or other device)<br />
1/2 teaspoon cinnamon</p>
<p>Separate the egg whites from the egg yolks. Set aside one egg yolk for the cheese filling listed above. Add the cream of tartar to the egg whites. Whisk the egg whites into stiff peak (Took me about 4 minutes). In a separate bowl add the egg yolks, cream cheese, coconut flour and cinnamon and mixture together. Fold the egg yolk mixture into the egg whites mixture until combined. Place the mixture into a  muffing top pan lined with parchment paper. Spoon the filling mixture into the center of each danish. Bake at 300 degrees for 25-30 minutes.</p>
<p>Makes 10 Danishes</p>
<p>* I prefer using <a href="http://www.netrition.com/cgi/goto.cgi?aid=3167&amp;pid=239-0001">diabetisweet</a> with this recipe, I found that truvia was still too grainy even after processing in the magic bullet.</p>

<p>6 large eggs<br />
1/4 cups heavy cream<br />
1/4 cups ricotta cheese<br />
1/2 teaspoon black pepper<br />
1/4 teaspoon kosher salt<br />
1 tablespoon oil<br />
1 teaspoon butter<br />
1 small onion<br />
1 clove garlic, minced<br />
8 leaves of kale, cut into ribbons<br />
1/2 cup shredded cheese</p>

Beat the eggs and whisk in the ricotta cheese and heavy cream. Add the black pepper and salt to the eggs and whisk in then set aside. In a medium frying pan add heat the oil and add the butter. Add the onions and cook for about 4 minutes on medium heat. Add the garlic and cook for 1 minutes. Add the kale and cook for three minutes. Pour the egg mixture over the kale in the frying pan. When the outer edges of the eggs are cooked, top with grape tomatoes and sprinkle cheese over the frittata. Place the pan with the frittata in the oven and cook at 350 degrees for 20 minutes.<br />

<p>Method:<br />
Mix the dry ingredients together.<br />
In a separate bowl mix the wet ingredients.<br />
Mix the wet ingredients into the dry ingredients.<br />
Using a spoon, spoon the mixture into the baking pan<br />
Top with bagel topping (see ingredients below)<br />
Bake at 350 degree for 25 minutes.</p>

<p>4 large eggs<br />
1 lb sausage meat<br />
2 tablespoon carb quik<br />
1 cup crush pork rinds<br />
1 tablespoon Worcester sauce<br />
2 tablespoons grated  onion<br />
tsp chopped fresh parsley<br />
1/2 tsp sage<br />
1/2 tsp garlic powder<br />
1/4 tsp crushed red pepper<br />
2 eggs<br />
salt<br />
pepper<br />

<p>Method<br />
Bring saucepan with water to a boil, using a spoon, place each egg into boiling water. Allow the eggs to boil for ten minutes then place the eggs into a cold water bath. Peel each egg over running water and set aside. Season the sausage meat by adding the onions, worcestershire sauce, parsley, sage, garlic powder, red pepper, salt and pepper. Divide meat into 4 sections. Flatten each section and dip them into the carbquik mixture. Form the flattened meat patties around each egg. Dip each ball into the beaten egg then into the pork rind mixture. Place on a pyrex dish and bake at 400° for 30 minutes.<br />

<p>Butter Herb sauce<br />
2 tablespoons melted butter<br />
1/2  tsp dried parsley flakes<br />
1/4 tsp old bay<br />
1/2 tsp garlic powder</p>
<p>Mix <a href="http://www.netrition.com/cgi/goto.cgi?aid=3167&amp;pid=219-0002">Carbquik</a> with old bay, chives and garlic powder</p>
<p>Add butter leaving in some butter chunks (this will keep these moist)</p>
<p>Add the cheddar cheese and milk</p>
<p>Combine the mixture (don&#8217;t over mix)</p>
<p>Using a tablespoon, drop mixture on a baking pan.</p>
<p>Makes 10 biscuits.</p>
<p>Bake for 12 minutes at 375 degrees.</p>
<p>Melt the butter mixture and add the herb seasonings, brush the butter<br />
mixture unto the biscuits. Serve immediately.</p>

<p>1/4 cups Soy Grits</p>
<p>1 teaspoons Baking Powder</p>
<p>4 tablespoons  Melted butter (unsalted)</p>
<p>1 tablespoon Splenda</p>
<p>2 eggs ( beaten)</p>
<p>1 cup Calorie Countdown Milk</p>
<p>1/2 cup Frozen Spinach (defrost and squeeze out all liquid)</p>
<p>1 tsp Turmeric</p>
<p>1/2 cup of Gorgonzola Cheese</p>
<p>2 tablespoons Chopped Chives</p>
<p>Method</p>
<p>Mix the dry ingredients together. Then set aside.</p>
<p>Mix the wet ingredients together and pour into the dry mixture.</p>
<p>Pour mixture  into a 9 inch dish.</p>
<p>Bake at 400 degrees for 25 minutes.</p>

<p>Ingredients:<br />

<p>1 cup Carbalose flour<br />
1 cup Almond flour<br />
2 table spoons Splenda<br />
1 tablespoon Baking Powder<br />
1/4 teaspoon baking soda<br />
1/2 stick or 4 tablespoons  unsalted butter, frozen and cut into pieces<br />
1/2 cup  Dried Cranberry<br />
1/2 cup Heavy Cream<br />
1 Large Egg</p>
<p>Directions</p>
<p>Preheat oven to 400 degrees.</p>
<p>In the food processor mix all the dry ingredient.<br />
Cut the frozen butter into pieces and add to the food processor and mix for a few seconds until blended with the dry mixture.<br />
Mix the  heavy cream and the egg and vanilla extract.<br />
Add the liquid mixture to the flour mixture.<br />
Add dried cranberry to mixture.<br />
Separated into 8 pieces and drop scones on the baking sheet.</p>
<p>Bake at 400 degrees for 10-15 minutes.</p>
<p>Serves 8<br />

<p>I have made the Atkins revolution rolls, and while they were OK I knew I could improve upon that recipe to add better texture and a lot more taste, so I present to you &#8221; Jay&#8217;s Low Carb Croissants&#8221;.   These are so yummy and I love the texture, so much like regular Croissants.</p>
<p>Ingredients:</p>
<p><span id="more-218"></span></p>
<p>4 Egg Whites</p>
<p>1/4 tsp cream of tartar</p>
<p>3 Egg Yolks</p>
<p>1 Tsp Mrs Dash (original blend)</p>
<p>1 cup Shredded Cheddar Cheese</p>
<p>1 scoop of 365 Brand vanilla whey protein shake (from whole foods) mix with 1/4 water </p>
<p>1 Tablespoon Mayonnaise</p>
<p>Method:</p>
<ol>
<li>To the egg yolks add the  Mayonnaise, Mrs dash, cheddar cheese and the vanilla shake and mix until uniform.</li>
<li>To the egg whites add the cream of tartar and whisk using a mixer as shown in the video.</li>
<li>Add the egg yolk mixture to the egg whites and fold in the mixture.</li>
<li>Using a large spoon, spoon mixture out to a try lined with parchment paper.</li>
<li>Bake for 35 minutes at 300 degrees</li>
<li>Turn oven off and leave in oven for another 5 minutes.</li>
<li>Then remove croissants and place on a wire rack to cool.</li>
<li>Let cool for about 10 minutes before eating.</li>
</ol>
<p>This mixture will make 6 large croissants, Enjoy!</p>

<p>Yes!! That right I said &#8220;low carb home fries&#8221;, I had a craving  for home fries this morning and of course potato was out of the question, so I had to improvise and I used radishes. When I told my husband what I was about to do with the radishes he made a face and proclaimed that there was no way that radishes could ever take the place of potatoes. Lets just say when I was done cooking them he was the first to grap a plate. He could not believe what he was tasting then he said it, the words every low carb cook wants to hear and those words were &#8221; hunny these these just like real potatoes!&#8221; This totally made my day!</p>
<p><strong>Ingredients</strong></p>
<p><strong><span id="more-181"></span><br />
</strong></p>
<p>1/4 Teaspoon Black pepper<br />
1/4 Teaspoon Paprika<br />
1/8 Teaspoon Salt<br />
1/2 medium onion<br />
1 Tablespoon Unsalted Butter<br />
1 Tablespoon Olive Oil<br />
1 Large Bunch Radishes<br />
<strong><br />
Directions:</strong><br />
Heat pan over medium heat.<br />
Add the Butter and Oil.<br />
Add the onions and saute for two minutes.<br />
Add the radishes, and season with remaining ingredients.<br />
Cook over medium heat or about 9 minutes.</p>

<strong>Ingredients</strong></p>
<p>1 Head of cauliflower-steamed</p>
<p>1 teaspoon baking powder<br />
2 tablespoons of whole wheat flower<br />
2 eggs<br />
1/4 cup parsley-chopped<br />
1/4 onions finely chopped<br />
2 garlic chopped<br />
2 tablespoons Parmesan</p>
<p><strong>Method</strong></p>
<ol>
<li>Steam cauliflower for about 15 mins</li>
<li>Mash cauliflower with a potato masher</li>
<li>Add onions</li>
<li>Add garlic</li>
<li>Add Parsley</li>
<li>Add Parmesan cheese</li>
<li>Add baking powder</li>
<li>Add whole wheat flour</li>
<li>Add Black pepper and salt</li>
<li>Mix ingredients together</li>
</ol>
<p>Take a heaping teaspoon and flatten in the palm of hand to form a patty<br />
Add oil to pan and pan fry for 4 minutes each side or until golden brown</p>
<p>Eat with apple sauce or sour cream. Enjoy!</p>

Well, not anymore! Now I use carbquik to make low carb pancakes instead of regular flour. Carbquik has been compared to Bisquick and it has about 90% less carbs. It has 2 net carbs per serving and you can use it in replacement for flour in just about every recipe, even to coat chicken for frying.  This low carb pancake is yummy and I use sugar free jelly and whip cream to top it off with a little fruit.</p>
<p><strong>Low Carb Pancake</strong><br />

1/4 Cup Carbqick<br />
1 egg<br />
2 Teaspoon Baking Powder<br />
2 Teaspoon Oil</p>
<p>In a Bowl mix together the carbquik and the baking powder<br />
Add the oil and mix.<br />
Slowly pour in the egg and whisk together.<br />
Add enough cream and mix until mixture is thin enough to pour.<br />
Spray pan with cooking spray.<br />
Add the pancake mixture and allow to brown until you see tiny bubbles forming at the top then<br />
flip pancake and allow to cook for 2 minutes more.</p>
<p>Top with your favorite topping.<br />
