		</p><p>With 4th of July right coming up, I thought this would be a perfect opportunity for me to share my low carb corn dog recipe. It is easy to make and would be fun to make with kids. I first made this recipe about a year ago with my niece, who really enjoyed it. I think I became her favorite Auntie that day (lol). <p>8 cups whole milk<br />
1 cup heavy cream<br />
1 teaspoon salt<br />
3 tablespoon fresh squeeze lemon<br />

Method:<br />
Add milk, heavy cream and salt to the pan and bring to a slow boil.<br />
Stir from time to time to prevent the milk from scorching.<br />
Once the milk begins to boil add the lemon juice and stir in for about 2 minutes longer.<br />
The milk will begin to curd.<br />
Remove and drain on a cheese cloth for about 20 minutes.<br />
The cheese will become thicker the longer it is left to drain<br />
in cheese cloth<br />

<p>Butter Herb sauce<br />
2 tablespoons melted butter<br />
1/2  tsp dried parsley flakes<br />
1/4 tsp old bay<br />
1/2 tsp garlic powder</p>
<p>Mix <a href="http://www.netrition.com/cgi/goto.cgi?aid=3167&amp;pid=219-0002">Carbquik</a> with old bay, chives and garlic powder</p>
<p>Add butter leaving in some butter chunks (this will keep these moist)</p>
<p>Add the cheddar cheese and milk</p>
<p>Combine the mixture (don&#8217;t over mix)</p>
<p>Using a tablespoon, drop mixture on a baking pan.</p>
<p>Makes 10 biscuits.</p>
<p>Bake for 12 minutes at 375 degrees.</p>
<p>Melt the butter mixture and add the herb seasonings, brush the butter<br />
mixture unto the biscuits. Serve immediately.</p>

<p>Here are the Ingredients</p>
<p>4 cups cauliflower (Riced)<br />
2 tablespoons chopped carrots (don&#8217;t use if on Induction)<br />
Onions<br />
1 egg<br />
1 clove chopped garlic<br />
1/2 onion<br />
2 green onions (for garnish)<br />
1 tsp sesame oil</p>
<p>2 tablespoons soy sauce</p>
<p>2 tablespoon olive oil<br />
1/2 tsp salt<br />
1/8 tsp ground ginger or chopped finely<br />
1lb pork (sliced thinly)</p>
<p>1 tsp olive oil</p>
<p>Method:</p>
<ol>
<li>Add the olive oil to the pan on medium heat</li>
<li>Add the garlic and cook about 30 seconds</li>
<li>Add the pork and stir fry for about 8 minutes.</li>
<li>Add the onions and stir fry for one minute.</li>
<li>Add the chopped carrots and stir fry one minute.</li>
<li>Add about 6 broccoli florets and stir fry about 30 seconds more.</li>
<li>Add the cauliflower and stir fry.</li>
<li>Add the sesame oil and soy sauce.</li>
<li>Stir fry for about 4 minutes more.</li>
<li>Move the fry rice over  to one side of the pan and add the egg and scramble the egg.</li>
<li> Add the 1 tsp of oil and add the egg is scrambled mix in with the cauliflower rice.</li>
</ol>

<p>Today I made low carb french fries. It was so yummy and similar to french fries that the only difference I noticed is that the celery root is a little more chewy with a snappy taste to it. The celery root is very low in carbs and an excellent substitute for potatoes. It is a little pricier and the only place I could find it was at the Whole Foods Store.  This really curbs my craving for french fries. I hope you enjoy.<br />

<strong>Nutritional Values for Celery Root:</strong></p>
<p>According to information on about.com here are the stats:</p>
<p>1 cup raw (100 grams) &#8211; 7 grams of carbohydrate plus 2 grams fiber</p>
<p>Here is what the vegetable looks like (very unattractive, I know)</p>

<p style="text-align: left;">8 oz celery root</p>
<p style="text-align: left;">1 tablespoon Original Mrs Dash</p>
<p style="text-align: left;">1 Tablespoon of Olive oil</p>
<p style="text-align: left;"><strong>Method:</strong></p>
<p style="text-align: left;">Peel wash and slice the celery root into french fries.</p>
<p style="text-align: left;">In a dish pour the olive oil and Mrs dash over the celery root and mix in.</p>
<p style="text-align: left;">Bake at 400 degrees for 30 minutes. Serve with sugar free ketchup</p>

<p>I love rice, and this was another reason why I was not sure about low carb, but guess what? I have discovered a great way to make the best low carb fried rice ever made, and of course I sharing the recipe with all my low carb friends. I know you guys will love this one! This low carb cauliflower rice is full of flavor and I guarantee you will not miss the regular high carb rice.</p>

<p><strong>Ingredients:</strong></p>
<p>1 Cauliflower head</p>
<p>1 small carrot</p>
<p>Great Value Brand sweet peas</p>
<p>2 oz Onions (chopped)</p>
<p>4 0z Red Pepper</p>
<p>2 Eggs (small)</p>
<p>2 Tablespoons Olive oil</p>
<p>4 Green Onions</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Add 1 tablespoon of olive oil to the pan.</li>
<li>Add the onions and coke for 2 minutes.</li>
<li>Add the Cauliflower.</li>
<li>Cook for 3 minutes.</li>
<li>Add the carrots and celery and mix.</li>
<li>Add the sweet peas and mix and cook for 1 minute longer.</li>
<li>Add the red pepper.</li>
<li>Push the cauliflower to the side of pan and add the egg and scramble (watch the video to see how this is done)</li>
<li>Mix with rice.</li>
<li>Add Soy Sauce</li>
<li>Add Sesame Oil</li>
<li>Add Salt to taste</li>
<li>Add the green onions</li>
</ol>
<p>Serves 6</p>

<p>Here is the Recipe<br />

<strong>Ingredients</strong></p>
<p>1 Head of Cauliflower (chopped using food processor, please see the video)<br />
2 eggs (beaten)<br />
1 tablespoon low sodium soy sauce<br />
2 tsp sesame oil<br />
1 stalk of celery (chopped)<br />
1/2 of a carrot (chopped)<br />
1/2 red pepper (chopped)<br />
1/2 onion (chopped)<br />
4 green onions (chopped)<br />
1/2 cup green beans (I used frozen)<br />
2 tbsp oil<br />
salt and pepper to taste</p>
<p><strong>Method:</strong><br />
1. Add oil to the pan and add the onions and saute for 2 minutes.<br />
2. Add the cauliflower and fry for about 3 minutes.<br />
3. Add the red pepper and the carrots and cook for 1 minute longer.<br />
4. Move the cauliflower rice to one side and add 1 table spoon of oil.<br />
5. Add the egg and scramble.<br />
6. Mix into the rice<br />
7. Add the green onions and mix into the cauliflower rice.</p>
<p>This is the best low carb rice, so tasty and so low in carb!</p>

<strong>Mac and Cheese</strong> (low carb)</p>
<p>12 ounces firm tofu</p>
<p>8 ounce package of shredded Mexican cheese</p>
<p>1 whole egg and 2 egg whites, beaten</p>
<p>1/4 cup fat free evaporated mile</p>
<p>1/2 large onion (chopped)</p>
<p>1 dash of cayenne pepper</p>
<p>3 cloves garlic (minced)</p>
<p>1/2 teaspoon prepared mustard</p>
<p>Top with</p>
<p>-paprika</p>
<p>-1/4 cup Parmesan cheese</p>
<p><strong>Direction</strong>:</p>
<p>1 Place the Tofu in a strainer and squeeze out any excess water.</p>
<p>2. In a saucepan saute the onions and garlic for about 5 minutes until soft.</p>
<p>3. Mash tofu well, leaving a few chunky pieces.</p>
<p>4. Mix all the remaining ingredients together.</p>
<p>5. Top with 1/4 Parmesan  cheese and paprika.</p>
<p>6. Bake at 350 degrees for 45 minutes ( top should be slightly brown)</p>
<p><strong>8 Carbs per serving</strong>!</p>
