<p>So, I have been quite busy getting things together. I realize that I have not posted in quite some time and I want to change that today. I want to take this time to answer some questions  that I get quite frequently regarding my diet plan and weight loss. If after reading this post you still have questions, please feel free to comment below.</p>
<p><strong>Q and A with Jay!</strong></p>
<p><em>Are you on Atkins?</em></p>
<p>While I am not on Atkins, I do follow a low carb lifestyle. I had a hard time staying on the regit Atkins Induction program. So, now I eat  between 25 and 30 carbs daily and I am seeing amazing results.</p>
<p><em>How much weight have you lost so far?</em></p>
<p>To date, I have lost a total of 30lbs!</p>
<p><em>Why don&#8217;t you list the nutritional information for your recipes?</em></p>
<p>In the beginning when I did list the nutritional values, I would get comments from readers questioning the carb count of the recipes. Carb count can fluctuate based on the food brand that I use versus the food brands my readers use. I would have to spend time breaking down each ingredient by carb count to show how I achieve the final number. As you can imagine, this was quite a tedious task for me. I now realize that this information is vital to many of you on a restrictive diet. So, I am working on getting the counts for each recipe added and in the future all recipes will be published with the nutritional information attached to them.</p>
<p><em>How has your health improved since doing low carb?</em></p>
<p>Since doing low carb I have seen amazing results with my health.</p>
<p>1. I know longer have diabetes.It is controlled with my diet.</p>
<p>2. I lowered my cholesterol by 30 points. That is right people, eating fat does NOT make you fat! It gets you healthy!</p>
<p>3. I have so much more energy!</p>
<p>4. PCOS and issues associated with this health syndrome, are no longer an issue for me.</p>
<p>Do you exercise?</p>
<p>Yes! Exercise to me goes hand in hand with a healthy lifestyle. I try to go to the GYM 5 days per week. I do 30 minutes of cardio and every other day I do strength training along with the cardio.</p>
<p><em>How much more weight do you need to lose to reach your goal?</em></p>
<p>My goal weight is 140lbs. I have 95 more pounds to lose, and I am working on doing that this year. Feel free to follow my journey <a href="http://www.youtube.com/user/raceto140">here. </a></p>
<p><em>When will you make more recipes?</em></p>
<p>I have so many goodies to show you guys, I am constantly writing and creating new recipes. I love cooking and I am always excited to share my recipes. I am reorganizing this blog before I start cooking again.  I should have a recipe video up really soon.</p>
<p><em>I notice that you have not done a podcast in quite sometime, are you still doing them?</em></p>
<p>Yes! I am working on getting that organized too.</p>
<p><em>Do you have any advise for someone who is just starting on a weight loss plan?</em></p>
<p>I am so flattered by this question,  so here is my advise I say these words to myself daily- NEVER GIVE UP!</p>

<p>So I will be starting Induction again on Monday January 10th. I need to jump start my weight loss for sure.</p>

<p>As the clock struck midnight and the new year rolled in, I was filled with a feeling I had not felt in a while. My heart was full.</p>
<p>I was excited and genuinely happy! Maybe the <span style="text-decoration: line-through;">tequila </span>had something to do with that&#8230;, or maybe it had something to do with knowing that this year was the year I would lose half of my weight. Or the fact that I had discovered the secret to long term weight loss? (shush)</p>

<p>Whatever the reason, I can now say with great confidence that this year will be my year to accomplish many goals. Some of these goals you will learn about in my latest post, some you will learn about from my videos, and most you can read about in the list below.</p>

<p>Lose 50 lbs</p>
<p>Play a game of tennis</p>
<p>Learn to belly dance</p>
<p>Wear a size 14 jeans comfortably by December 2011</p>
<p>Do a weekly low carb podcast</p>
<p>Take a monthly before and after photo</p>

<p>I have not been blogging for some time now because I have been trying to focus on getting my workout and eating under control with the help of the First Coast Biggest Loser Team. I thank you all for being so patient with me. I will be back in the kitchen this week so expect to see more delicious low carb recipes coming up.<br />

I have thought about you all so much and to those of you who emailed me with your personal stories I appreciate you. My goal for creating this blog remains the same, which is to get healthy and to control my diabetes with diet and exercise.  I have to say that I am well on my way to accomplishing this goal. I would love nothing more but to have everyone who is going through the struggle of weight loss to join me in getting fit and healthy. I will be starting a new weight loss challenge this week open to all my blog readers and my you-tube subscribers and to all you are seeking better health.</p>
<p>The goal of the weight loss challenge is to lose weight with diet and exercise along with support from each other. I will blog and update you guys about a goal we should complete each week. The challenge will begin on Monday and will continue on indefinitely. </p>
<p>I will be posting a video later today with the details of this weight loss challenge.<br />

<p>Feel free to leave me comments and let me know your thoughts on the graph above. I would also be interested to know if you have ever tried a low carb diet. I am not doing Atkins or The South Beach diet because those diet&#8217;s are just too restrictive for me. I plan to incorporate a daily workout plan into my weight loss plan, but more on that later. I will include more specific information about the plan soon.<br />

Carbs+ Me= Diabetes Type 2</p>
<p>Carb addict, addicted to carbs, carboholic, regardless of how you say it, I believe I am a self proclaimed one!  The truth is that I have been having a long lasting love affair with carbs my entire life. Being born and bread (please excuse the pun) in the Caribbean may have played a big part in my addiction to carbohydrates. I love rice and any kind of meat,  for the first 20 years of my life I was eating a daily diet that had included white rice.  This is really shocking when I think about how I always had 2 or 3 helpings most days. If you consider that 1 serving is equal to 28 grams of carbohydrates and on a typical day I was having about 84  to 112 grams of carbs daily from  rice alone. It is no wonder that my pancreas gave up!</p>

<p>I believe that my diagnosis of  type 2 diabetes was a way of my body telling me to lower my carb intake because it was just too exhausted and could not continue to work as efficiently with the amount of carbohydrates I was consuming. Boy, being diagnosed with diabetes was a big wake up call for me. I was extremely frightened, I cried, blamed myself, cried some more, then I got angry and it is through my anger and fear of this disease that I went on a journey of self education. I have learned so much about the correlation between type 2  diabetes and diet since then. I was fascinated by the results of my research,  so I decided to created this blog. My hope is to share my journey of managing this disease and to  help those who are faced with this disease to find knowledge and hope through my findings.<br />
