Low Carb Beef Lo Mein

I created this recipe because I had a really bad craving for beef  lo mein and wanted to stay lo carb. This recipe hit the spot. I hope you all enjoy this one. This recipe serves 4, my hubby had 3 servings and I had ONE! It was just that good!

Beef Marinate

1 teaspoon Worcestershire sauce

1 clove garlic (chopped)

1 tablespoon brown rice vinegar (sugar  free)

1 tablespoon sofrito

1 tablespoon soy sauce

1 lb beef strips

Method

Mix ingredients together and marinate for about 30 mins in the refrigerator.

Sauce for Beef lo mein:

1 tablespoon Oyster sauce

1/2 tablespoon chili paste  – I used Sambal Oelek ground fresh chili paste (found at Walmart store) zero carb!

1 tablespoon soy sauce

1 tablespoon sesame oil

3 tablespoons low sodium chicken broth

1/2 tsp splendor

1/4 xanthan gum

Method:

Mix all ingredients together leaving the xantham gum for last. Using a find strainer mix in xantum gum and sprinkle into sauce.

Stir Fry Ingredients

1 inch ginger chopped or use 1 tsp ginger paste

1 clove garlic (chopped)

1 cup broccoli

1/2 cup chopped onion

1 cup sliced cabbage

2 green onions

1 clove garlic

2 tablespoon Expeller pressed peanut oil

2 bags Shiratiki noodles (cooked according to directions)

Direction:

Heat wok and add one tablespoon  peanut oil.

Add the beef and stir fry for about 4 mins and remove from the work.

Add the second tablespoon of peanut oil.

Add the garlic and ginger paste

Add cabbage and cook  for about 1 minute

Add the onion and mix in with the cabbage

Add the green onions and stirfry for 1 minute

Add the broccoli

Add Half of the stir fry sauce and cook for 30 seconds.

Add the Shirataki noodles

Then add the cooked beef

Add the rest of the stir fry sauce

Cook 1 minute longer and remove from heat and serve hot!

    Oyster sauce does have sugar, I could not find any substitute for that. It has 5 grams of sugar and this recipe serves 4 so it really is very spreed out and will not
    effect you much or maybe not at all. Thanks for the compliment about my voice, you sound like you miss your best friend I am glad I am able to remind you of someone who you seem to care so much about. Thanks so much for commenting Linda : )
