Stuffed Keto Low Carb Meatloaf

Meatloaf

1 tablespoon olive oil
1 onion, minced
1 stalks celery , minced
2 cloves garlic, minced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/4 tsp dried thyme leaf
1/4 cup chopped fresh parsley
1 1/2  pound ground beef
1 tablespoon Worcestershire sauce
1/2 cup of tomato sauce
1  teaspoon salt
1/4 teaspoon black pepper
1/4 cups of Parmesan cheese
1 egg

6-8 oz fresh mozzarella cheese (sliced)

Tomato based topping
1/2 cups no sugar added ketchup
1 tablespoon of yellow mustard powder
1/2 tablespoons of golden Locanto Sweetener
1/4 tsp cayenne pepper

Preheat oven to 350° F. Grease a baking pan with butter or line with parchment paper and set aside.  In a small pan sauté the onion, celery and thyme in oil over medium-high heat for 4 minutes. Add the minced garlic and saute for one minute longer. Set aside to cool.

In a large bowl combine all the ingredients, including cooled vegetables and fresh chopped parsley. Do not over work the meat. Mix until combined.

Place half of the meat mixture in the loaf pan then layer the mozzarella cheese then top with remaining meat mixture. Pour half of the tomato based topping over the meat loaf. Bake for about 45 minutes. Pour remaining tomato based topping over meatloaf. Bake for 15 minutes more or until the center reaches 160° F. Allow to cool before serving.

  4. I have one more question, this is not a duplicate. I could not find as not on list of ingredients or amount not mentioned in video. Just dumped in. How much pork rinds is in there.

  6. i have your recipes streaming on my tv. I did finally find the actual recipe but not sure if I am doing it the hard way. I am not familiary with utube so little help would be good. Do I have to join or something it kept asking me to add to chrome then to extension. —Oh did I mention to you that I am electronically challenged on a good day. Also what is Golden Locanto Sweetener and where can I get it. Only store within 15 miles is Walmart. Is there any other sweetener I can use.. I very much enjoy your videos. I just wish there was a way to get recipe from tv when I watch your lessons. Linda Do I need to subscribe and how do I do that?
