Low Carb Cauliflower Fritters

These really remind me of potato pancakes, my favorite breakfast treat. Quick and easy to make, you will forget

you are eating cauliflower (not that there is anything wrong with that! Ha!).

Ingredients

1 Head of cauliflower-steamed

1 teaspoon baking powder
2 tablespoons of whole wheat flower
2 eggs
1/4 cup parsley-chopped
1/4 onions finely chopped
2 garlic chopped
2 tablespoons Parmesan

Method

  1. Steam cauliflower for about 15 mins
  2. Mash cauliflower with a potato masher
  3. Add onions
  4. Add garlic
  5. Add Parsley
  6. Add Parmesan cheese
  7. Add baking powder
  8. Add whole wheat flour
  9. Add Black pepper and salt
  10. Mix ingredients together

Take a heaping teaspoon and flatten in the palm of hand to form a patty
Add oil to pan and pan fry for 4 minutes each side or until golden brown

Eat with apple sauce or sour cream. Enjoy!

    Low carb dieting has been the best thing that happened to me! I am able to control my blood sugars and the weight is coming off. I am now eating even lower carbs than when I started. I love cooking and being creative with food, it is one of life simplest joys : )
