Low Carb Tortilla



1/2 cup Almond Flour

3 tablespoons calorie countdown milk

2 tablespoons soy grits

1/2 cups ricotta cheese

3 eggs

1/8 tsp salt

1 teaspoon olive oil greasing the pan

    These look so good! I know it’s been a few years since you posted it, but because I’ve been making tortillas with coconut oil for a couple of weeks now I wanted to say that it’s definitely possible. If you don’t want to affect the flavor, you could use coconut cooking oil, which is more refined and has more MCT’s but no coconut scent or flavor. It looks and smells more like regular vegetable oil and is always liquid. Personally, I prefer real organic coconut oil.

    Where does one find soy grits in the L.A. area? I’ve been to a lot of stores but they’ve never heard of them.

    I don’t use soy-any substitutes for that and probably can use almond milk with these.

    Can you use coconut oil to cook the tortilla?
