Rotisserie Chicken Salad Recipe

I love this chicken salad recipe. I love to use the Costco Rotisserie chicken for added flavor. You will love this recipe. It is Atkins Induction friendly and can be paired with my low carb croissant recipe. Enjoy

2 Rotisserie Chicken breast pieces or 8 oz of Rotisserie chicken (white meat)
2 tablespoon of fresh parsley (minced)
2 tablespoons of onions (minced)
1 stalk of celery (minced)
1 tablespoon of black olives (sliced thinly)
1-2 teaspoon of lemon juice

Dressing
2 oz of softened cream cheese
1/2 cups of mayonnaise
1 teaspoon of Sriracha sauce
1/4 teaspoon of black pepper
1/4 teaspoon of paprika
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
1/8 teaspoon of ground white pepper
1 tablespoons of heavy cream

Aprox Net carb per serving: 2.8
Calories per serving: 180
Serves 4

    Recipe looks YUMMY!! I’ve stopped weighing myself every day, too. I was getting discouraged, lose one day, gain the next, lose the next, etc. I’ve been doing well on my carb count and getting some exercise riding my bike. I feel GREAT!! 🙂
